Story
Chicago roots, a California kitchen, and one recipe we've never let go of.
Baldwin Park Pizza Company opened in 1997, started by Joey Spillone — Chicago roots, a Californian for thirty-plus years, and a man with strong opinions about how a pizza should be made.
That opinion hasn't budged. Every pie still starts with hand-made dough, California-grown tomatoes, garden-fresh produce, one hundred percent mozzarella, and the family's homemade red-sauce recipe. Joey's original recipe — and, we'll go ahead and say it, still the best.
We're a single room on Maine Ave, not a chain, and we'd like to keep it that way. Same dough, same sauce, same wings — for whoever walks in.
